			<content:encoded><![CDATA[<p></p><p>I know there&#8217;s been a massive lack of posting around here lately.  The new job is taking up a lot of my attention! But, that&#8217;s a good thing and I hope to get into a routine that does allow some more posting here.  As a quick &#8220;thank you&#8221; for sticking around, I&#8217;m passing along an old favorite recipe that I threw together tonight and realized it has been far too long since I made it. I&#8217;m a big fan of Blue Cheese Dressing for salads and dipping.  Years ago, searching for something that wasn&#8217;t totally calorie-laden, I stumbled across this idea &#8211; it&#8217;s so simple you won&#8217;t believe that it&#8217;s good, but it is.</p>
<p>All you do is put some sour cream in a container &#8211; I use Reduced Fat Sour Cream &#8211; toss in some Blue Cheese (however much or little you like) then put a little bit of plain white vinegar in &#8211; just enough to thin it to whatever consistency you like. That&#8217;s it. You&#8217;ll be surprised at how good it tastes.  One tip &#8211; I&#8217;ve tried the low-fat cheese and it&#8217;s not as good, but this is still better than something based on mayonnaise, isn&#8217;t it?</p>
