I know there’s been a massive lack of posting around here lately. The new job is taking up a lot of my attention! But, that’s a good thing and I hope to get into a routine that does allow some more posting here. As a quick “thank you” for sticking around, I’m passing along an old favorite recipe that I threw together tonight and realized it has been far too long since I made it. I’m a big fan of Blue Cheese Dressing for salads and dipping. Years ago, searching for something that wasn’t totally calorie-laden, I stumbled across this idea – it’s so simple you won’t believe that it’s good, but it is.
All you do is put some sour cream in a container – I use Reduced Fat Sour Cream – toss in some Blue Cheese (however much or little you like) then put a little bit of plain white vinegar in – just enough to thin it to whatever consistency you like. That’s it. You’ll be surprised at how good it tastes. One tip – I’ve tried the low-fat cheese and it’s not as good, but this is still better than something based on mayonnaise, isn’t it?
